This recipe was given to me by a vegan customer. It’s so yummy I thought I would share. It was given to me with European measures. I will list both with the converted US measures.
Vegan Vanilla Frosting
Ingredients
2.5 deciliters vanilla soy milk (about 1 US cup)
1 deciliter coconut or almond milk (about 1/2 US cup)
3/4 tsp. fructose
1 tsp. lecithin granules
1.5 tsp vanilla extract
1/2 deciliter melted coconut oil (about 1/4 US cup)
Instructions
Mix all ingredients except coconut oil. Once fully mixed slowly add coconut oil. Store in fridge.
I tried this, even though there are no directions. A complete waste of time and money.
I found this one online, and it was FANTASTIC:
- 1/2 C shortening
- 1/2 C soy butter (Earth Balance)
- 3 1/2 C powdered sugar
- 1 1/2 tsp vanilla
- 1/4 C soy milk (or rice milk)
Cream shortening and 'butter', then add sugar. Beat for a couple minutes, then add soy milk and vanilla. Beat for another 7-8 minutes until fluffy. Adjust consistency by either adding more soy milk or powdered sugar.
What is the consistnecy of this icing? What ingredient makes it firm up to ice a cake?
can you pleas tell me what "lecithin" is and where to find it, also "fructose" I need to make a vegan cake for a customer and this would really help.
