Maple Walnut Carrot Cake with Orange Icing

Maple Walnut Carrot Cake

2 cups all-purpose flour
2 cups granulated sugar
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon cinnamon
1½ teaspoon nutmeg
1½ teaspoon allspice
1½ teaspoon ginger
1 cup canola oil
4 eggs, beaten
2 teaspoons pure vanilla extract
3/4 cup pure maple syrup
2 cups finely grated carrot, firmly packed
1 large apple, peeled and grated
3/4 cup walnut pieces

Preheat oven to 325 degrees F.
Prepare two 8-inch cake pans with baking spray and parchment circles, set aside.
Sift together flour, sugar, baking powder, salt and spices in a large bowl.
Make a well in the center of dry ingredients.
Whisk oil, eggs, vanilla and syrup until incorporated
Pour wet mixture into well and fold together to make a tick batter.
Fold carrots, apple, and nuts into batter.
Pour into pans and bake 45 minutes or until cake tests done.
Cool completely before frosting.

Orange Cream Cheese Frosting

2 8-ounce packages cream cheese, softened
8 tablespoons unsalted butter, softened
2 cups confectioners' sugar
2 teaspoons orange zest
1 teaspoon pure vanilla extract
1/3 cup sour cream

Beat cream cheese and butter.
Add sugar, zest and vanilla, beat until smooth.
Incorporate sour cream.
Refrigerate 30 minutes before frosting cake.

Everything is apparently protected from being copied. Therefore I do not understand the point of publishing recipes at all! Isn't the whole point of sharing a recipe the notion the other person wants to try it?! 

This is is terribly frustrating and though I have seen similar comments from other frustrated bakers, there is never any response? Is anyone monitoring these comments?!

I would like to make this recipe but don't care for the apples and carrots, if I left them out would it still turn out ok?  Thank you!

@onecakelady ‍ the grated carrot and apple provide moisture plus quite a lot of substance. Leaving them out would significantly change the recipe. I think you could successfully substitute something similar, like grated zucchini or another squash for example.

Alternatively, you could use a spice cake recipe and add walnuts to get a similar result without the grated fruit and veg. http://www.cakecentral.com/recipe/20903/spice-cake-2
