Witon's Royal Icing

This smooth, hard-drying icing is perfect for making decorations that last. It is also useful as a “cement” to fasten decorations together. Royal icing is edible, but not recommended for icing cakes.

Witon’s Royal Icing


  • 3 Tablespoons Wilton Meringue Powder
  • 1 lb. (4 cups) confectioners’ sugar
  • 6 Tablespoons warm water*
  • * For stiffer icing, use 1 tablespoon less water


  1. Beat all ingredients until icing forms peaks
  2. (7-10 minutes at low speed with a heavy-duty mixer,
  3. 10-12 minutes at high speed with a hand-held mixer).
  4. NOTE:
  5. Keep all utensils completely grease-free for proper icing consistency. Icing will not harden properly if there is ANY amount of grease in it.
  6. Recipe makes 3 cups.

When I try this recipe on sugar cookies I get beautiful results but the taste isn't good. Would a flavored extract make it taste better? Are there better recipes for Wilton Meringue Powder?
