Homemade Bavarian Creme filling

I’ve had this recipe for a long time and always loved it, but it wasn’t exactly a “Bavarian cream”. So I tweaked it up a bit, and this is what I came up with. I hope you like it too.


  • 2 Cups granulated sugar
  • 5 Tbl. Cornstarch
  • 4 Tbl. Cocoa
  • 2 Cups Milk or Half and Half
  • 1/2 Cup Margarine
  • 4 Egg Yolks
  • 1 tsp. vanilla


  1. In a 2 Quart pot on the stove top, heat burner to med-low add all dry ingredients then add milk, margarine, and eggs. Wisk constantly until mixture becomes thickened. Remove from stove top and add vanilla. Allow to cool before layering cakes. Half and Half makes the difference.
