Passion Fruit Mousse

I met a bride who wanted a lilikoi (which is Hawaiian for passion fruit) cake filling. So began the odyssey – We have a rather large Oriental supermarket here and I found different fruit concentrates like Passion fruit, guava, Strawberry etc. The concentrates are thick like corn syrup and are sweet. The passion fruit has sugar but its still on the tart/tangy side. Hope you enjoy it!


  • 1 8 oz package cream cheese (softened)

  • 1/2 cup passion fruit concentrate
  • 2-3 tablespoons powdered sugar
  • 1 1/2 cups heavy whipping cream


  1. In a medium sized bowl, cream together the cream cheese and passion fruit concentrate till well combined. In a separate bowl, use an electric mixer and beat the cream on high speed until it is thick and holds a peak when you take the beater out. Beat in the powdered sugar, being sure it is entirely mixed in. Stir about 1/3 of the whipped cream into the passion fruit mixture until combined, then fold the passion fruit-cream mixture into the remaining whipped cream.

*The powdered sugar is to your taste – sometimes I don’t add it at all if the cake this mousse is paired with is very sweet. The tartness of the passion fruit evens it out

I need to do a Passion fruit filling as well but I can't refrigerate the cake because it is going to be a fondant covered cake. Have you done this in a fondant covert cake? If not I was thinking on using Passion fruit preserve.


Sorry... i use buttercream mostly. The 3 tier wedding cake i made this recipe for was refrigerated the night before and delivered in the morning and cut in the late afternoon. The filling was fine. Maybe a fondant practice cake?


Thank you. I am not sure about the fondant practice cake because I am a hobby baker so I do not have enough space to refrigerate a 3 tier wedding cake. The cake will be my wedding gift. He absolutely loves passion fruit. I have tried to find a recipe for a passion fruit preserve but so far I didn't find anything. I am trying to find a recipe on how to make preserves in general (so I can play with it) but I have not had any luck so far. If I cannot find anything I will have to buy passion fruit preserve and fill it with that but it is expensive because it costs about $3 for a small jar.


Hi! I actually might have to end up doing the mousse since my friend told me he tried a cake with mouse and loved it. I am very nervous about putting the cake in the fridge and have it pick up odors from the fridge. I am salon worried about condensation. Do u have a separate fridge dedicated to cakes?


I have a refrigerator in the garage just for me; mostly for cold water for the kids and overflow freezer items and where I store finished cakes.


karukaru- I dont know if i am to late but you can make buttercream icing but instead of milk just add fresh passion fruit juice or the concentrate. and it is really yummy. you can always do the same in a cake recipe. hope this helps alittle
