Super Moist Banana Cake

If you have bananas on hand that are about to go bad this is a great recipe for a banana cake. I love moist cakes and this is definitely moist! It is good with icing but great without icing as well.


  • 1/2 cup margarine
  • 2 eggs
  • 2 cups of flour
  • 3/4 baking soda
  • 1 tsp. vanilla extract
  • 1/2 cup milk
  • 2 cups mashed bananas
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/2 cups sugar


  1. Mix all ingredients. Bake at 325 for 30 minutes. (20 minutes for cupcakes)

I had an issue with one of my cakes the middle was super moist like all the bananas sat there. The rest of the cake was fine. Did anyone else have this issue? The second cake I made turned out great.


I made mini muffins with this and a few mini loafs... AMAZING! Sprinkled with a little sugar as soon as they came out of the oven and it is so good! Thanks for sharing!
