heathers carrot cake

this is a moist carrot cake which never fails me


  • 4ozes marg
  • 4ozes light brown sugar
  • 8 ozes self raising flour
  • 2 large eggs
  • 2 tsps baking powder
  • 2 tsps mixed spice
  • 2 meduim carrots grated
  • handfull of sultanas
  • handfull of broken walnits
  • milk


  1. crean the butter and the sugar together
    break one egg in glass bowl
    add yolk to butter and sugar mix in well then repeat with second egg
    whisk the egg whites then slowly pour the egg white in and mix with electric mixer if you have one
    then put flour /mixed spice/ baking powder together
    sift half flour and fold in then add grated carrot and sultanas to mixure
    then sift other half dry ingrediants in folding it in the mixture add milk to thin out mixture
    put into two 7-8 inch greased tins and i always flour mine too tapping out the excess
    cook in middle shelf in oven 150 for 20-25 minutes
    when cool fill with a cream cheese and butter ice mixture add walnuts on top for decoration
