Screwball Cake

I finally got this recipe off my sister in-law. It is one of my favourite chocolate cakes!

Ingredients

  • 1 1/2 Cups Flour
  • 1 Cup Sugar
  • 1/2 Cup Cocoa
  • 1 Tsp. Baking Soda
  • 1/2 Tsp. Salt
  • 1/3 Cup Oil
  • 1 Tsp. Vinegar
  • 1 Cup Water
  • 1/2 Tsp. Vanilla

Instructions

  1. ~ Sift the first 5 ingredients into one large bowl.
    ~ Make 3 holes in the dry mix ( 1st hole for Oil, 2nd hole for Vanilla, 3rd hole for Vinegar)
    ~ Pour water over everything and mix together until smooth
    Bake at 350 degree for around 30 min

probably a stupid question, but what is a screwball cake? does it just taste like chocolate cake? I've never heard of it before :s

are eggs really important for a cake recipie? do eggs hold everything together? so what is there are no eggs?

its got oil which I think is the stabiliser in the cake.... one tablespoon of oil is replacement for one egg in recipes which call for them for someone who is allergic... so I think it works fine without eggs as recipe calls... as the oil is acting in the job the egg is usually called for... i havent tried the recipe yet, but that would be my guess!

We have almost the same recipe in our family... We call it CRAZY cake. I serve it to anyone who has an egg or milk allergy and they can not tell the difference! It is a great cake... Trust me ;)

I've made this cake since I've been in high school (40 yrs. ago) We call it "Funny Cake". It is so simple and is one of the moistest cakes I've ever had.
