I found this recipe in a book that i have just bought. I decided to use this recipe on my next cake. it turned out great! I had never used marzipan before. and it tastes alot better than fondant.
Ingrediants-
2 c. ground almonds
1/2 c. sugar
1 c. powdered sugar
1 egg lightly beaten
1 tbsp. lemon juice
Directions-
1. mix almonds, sugar, and powdered sugar in a bowl.
2. work in the egg and lemon juice till stiff
3. turn onto a lightly sugared workspace
4.knead dough until really smooth
Is almond butter considered ground almonds? Is almond meal considered ground almonds? Are both acceptable?

Can I replaces lemon juice with almond essence?
Almond Flour/meal is simply blanched almonds ground into a fine powder. I use it in my recipe for Linzer cookies It can be referred to as almond powder as well.
