Lime (or lemon) custard-like filling

This recipe is free of animal products. I’ve used this recipe in eggless Lemon Meringue Pie, Key Lime pie and for cake fillings.


  • 1/4 cup lime juice (or lemon)
  • 2 ½ cups soymilk
  • 1 cup sugar
  • 5 Tbsp cornstarch
  • 2 tsp lime (or lemon) zest (washed well)


  1. Whip all ingredients together in saucepan, and heat over med, stir constantly until thick and creamy. Cool to room temp before using.

Approx: 8 servings

Does this filling crust well? If you use it for a cake filling would you be able to use it to crumb coat as well? TH Thanks:)
