It’s a lovely cake made with plum baby food – moist, rich, and a snap to make.
Plum Good Cake
Ingredients
2 cups all-purpose flour
2 cups white sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 cup vegetable oil
3 eggs
2 (4 ounce) jars plum baby food
1 tablespoon red food coloring
1 cup chopped black walnuts
1 cup confectioners’ sugar
1 tablespoon lemon juice
Instructions
1 Preheat oven to 300 degrees F (150 degrees C). Grease and flour a 10 inch tube pan.
2 In a large bowl mix together the flour, sugar, salt, baking powder, baking soda, cinnamon and cloves. Make a well in the center and pour in the oil, eggs, baby food and red food coloring. Mix well, then stir in chopped walnuts.
3 Pour batter into prepared pan. Bake in the preheated oven for 70 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove cake from pan while still hot and frost immediately.
4 To make the Frosting: In a small bowl combine 1 cup confectioners sugar and 1 tablespoon lemon juice. Stir until smooth.
