I had 2 friends with birthdays and had extra batter left over from my Winter Wonderland cake. I filled 4" Corelle bowls 2/3 full and baked a couple of mini-cakes. They are perfect for single people or ,elderly people that truly don't have need for a large cake. You can make the mini-cakes when you have the "extra" batter and freeze them for a few weeks until ready to decorate. (PS- each of these cakes were iced in about 15 minutes so please don't critique the icing job..)
