I made this cake for my daughter's college graduation. The cap was made using a small round cake with a piece of cardboard to complete the mortar board top. The tan and cardinal border is made using the college's colors. My color hint is to use powdered red coloring for a truer color. Red icing should be made a day ahead because it brightens as it sets.
