Jungle Cake For Cole's 9Th Birthday
This is the jungle cake presented in the Wilton book 2007----my son is totally into animals and the trees were quite a challenge for me. If you decide to try this one, add the pretzel trees later, as they absorb the moisture and tip. The leaves were made from fondant, the lake is blue gel icing, and the sand is brown sugar. He loved it and soo did his 25 friends who attended his party. Yeh for mom!! :0)

Oh, and the other tip about the trees-----use stiffer frosting--I just used the same buttercream as the rest of the cake and the leaves wouldn't stay on. So due to lack of time and stress I (get this) superglued them! Ha! It worked great! There are supposed to be vines from tree to tree, and three monkeys made from frosting, but the topplong trees made it impossible. I did cut the monkeys into parts and added tails below and heads above the top of one tree (I wonder if it can be seen in the photo?..
Whoops! I mean I hot glued them!~ Whatever works I guess!
