let's hope that patience is one of my virtues... haha I found this quote in an article with Duff, regarding time off....

"It's important. For example, we're taking all of February off, the middle two weeks of August, the week of Thanksgiving and the week of Christmas. "

I'm kinda thinking you shouldn't get your hopes up for any kind of response to your repeated emails. If I were a quasi-celebrity chef, I sure wouldn't respond to a riled up [insert grocery store name here] cake decorator wanting a challenge/confrontation/acknowledgement/validation/throwdown or whatever.

You and the staff of CCC are on opposite ends of the planet when it comes to the outcome of your cakes (quantity vs. artistic quality). If you're awesome, pat yourself on the back and know that they weren't talking about you! thumbs_up.gif

Imagine how the Giant cake decorators feel in Baltimore! LOL icon_biggrin.gif

Good gawdy people! It's HER opinion. I don't like the Giant store cakes either. Ugh. To each his own. But I've never said "the cake decorator at Giant really sucks". I've said the cakes do. If you do great work, hoorah for you! But let the girl have an opinion. I think the comment is being taken too much to heart, when it wasn't meant to be that way. She was speaking her personal truth. You know how good your work is, and it'll speak for itself thumbs_up.gif

Those grocery store cakes for the most part are baked sometimes 6 months ahead in a factory then flashed frozen and then shipped to the stores they serve. A frozen cake is a Yucky cake ! icon_biggrin.gif

OK!! Can't we all be grown-ups,and move on something more fun to talk about.How about some ideas on how we can come up with something new and excitig, instead of Agreeing with one side and desagreeing with the other,and so on and so on.So what even if the CCC answers the e-mail.Then what,it won't take us anywhere or make us any better cake decorators.This site is for the people to come and learn something new and not to "bash"
the others for the comment they made.We are all humans,and it doesn't matter how hard we try not to, we will end up saying something that will make someone upset one way or the other.So why not just be ourselfs and let this whole thing go.And let them keep their opinions for themselfs and we will have ours.Lets talk about something fun.Valentines day is comming up,lets talk about that.I think it would be more fun. You guys are better than that,then waisting your energy on something that it may never be agnowleged anyway(forgive my spelling).Just my opinion,I don't want to end up offensing someone else now.And start a whole another thread,lol.

She said she'd be mortified, when she fills out an application for a credit card or something and she puts down that she's a cake decorator, if they thought that she worked for Giant and made really ugly cakes.

Even if she hadn't mentioned a store by name....

I'm sure she didn't mean to hurt anyone's feelings...it just came out that way.

Maybe the Giant near her makes REALLY UGLY CAKES.

Until I went to work for a chain, I would look at the cakes at various stores and think..."Gosh, why do they decorate cakes when it's obvious they don't enjoy it"

I see now why it's not always enjoyable.

That last comment comes from one who would rather be decorating cakes than pretty much anything else.

IMHO, and this is probably going to get me in some trouble, but I don't think it's that big a deal. Grocery store cakes are slammed as previously mentioned on this site often.

And rightfully so, the decorations are horrible, no matter what the reason (quantity, time constraints, etc), even some of the other decorators on this site that work for these places say it.

They are limited as to what they can do, and what they can do has to only take a few minutes.

This is a comparison of Apples to Oranges, and I am sure that if CCC had to produce under the same circumstances putting all concern of quality and intricacies aside they could do it too.

More than likely the reason many of the store cake decorators are members of CC and bake out of their homes is so they can focus on quality after working like a machine all day. Bless the ones who do this job putting that little flower (glob of icing) in the same place every time would make me crazy.

If I were a cake decorator who was working for a CCC quality bakery and needed to fill out an application I would feel the same way. Hoping that I had a chance to explain my qualifications and the type of decorating that I am capable of and not just and assembly line.

Okay I just watched the video after I wrote a story and I must admit it made me laugh. I feel that way now and I am NOWHERE close to what they can do.

Not true. Freezing cakes properly adds an added dimension to them, IMO. They seem to be moister and richer tasting, kind of like how many stews and other dishes taste so much better as leftovers. And it makes large layers a helluva lot easier to handle. There is nothing wrong with freezing cakes! It is the improperly stored frozen cakes that taste like freezer burn.

I agree...although I do not usually freeze cakes for later use, I have frozen a cake to ease the sculpting. Freezing a cake changes it on a chemical level, producing a moister product. If it's stored correctly, I don't think anyone could tell the difference once thawed.
