Do you mean literally freezing the fondant? If I were planning to paint something on fondant with an airbrush, I would cover the cake and let the fondant set up for about an hour prior to painting, at room temperature or refrigerated, not frozen.

The airbrush paint and refrigeration/freezing are not friendly. Moisture will develop once removed into room temps. That needs to dry before adding any airbrushing. Depending on the size of the cake and the temp differences it can take as little as 30 minutes or as much as an hour or two.
