Should Cookies Be Baked The Night Before Or Morning Of Farmers Market?

Hello, 

I am selling some cookies at a farmers markets this weekend. My plan was to make them the night before, but questioning if it be best to wake up super early the same day. Cookie dough is already made and in the fridge, but wondering how bakeries do it. The cookies don’t have any type of icing. Setup is at 8:30am and doesn’t start till 10. Plan to keep cookies in an airtight container with a piece of bread to ensure they are kept moist and soft. Any tips?

Do you really see yourself lasting a long day getting up about 6 a.m. or earlier  to bake them?   That leaves no room for error of any kind   Don’t know what kind of cookies but Sounds to me like your original plan is fine
