MBalaska, your cakes are gorgeous! This is my one and only attempt at piping and I can't say that I am proud of it. It was for our Betty's birthday.

Yes, thanks for posting this. I loved looking at the clothes, dresses/veils etc. too. I didn't have a W-cake when I got married in '55. Guess that why I like doing them and looking at other peoples work. Don't do those great big ones anymore, to much work now.

Thank you, Betty! You are very generous, lol. I am determined to try and learn to pipe. So far, I've spent my time just learning to make a smooth cake, modeling chocolate sculptures and some flowers. It is about time to break out the piping bags!
kakeladi, you have no idea how many roses I made to finally get this many! I piped roses for at least half a day! I think my main problem is that I have not discovered the proper consistency for the icing. I always start out with it much too thick, even when icing the cake.
occasionally when I'm piping flowers for a cake I add some meringue powder to the icing just to stiffen it up a bit. By making them on wax paper squares & letting them dry out, they are less fragile, easy to move & place on the cake, yet still cut & bite soft.
Thank you for the tips, MBalaska! I have not tried the meringue powder. When I did these, I put them in the freezer for a few minutes.
As much as I love beautiful piping, it is stupid that I haven't given it serious effort. It scares me to death!
The meringue powder works, I use it sometimes. I make all my flowers on wax paper sq's and let them air dry, then when I place them I can pick them up without crushing and place where I want them. I sometimes use water & Crisco instead of milk or butter, they get firmer quicker and keep longer.
I tried my hand/practice at palette painting with leftover icing on back of cookie sheet, wasn't very good. A lot harder than it looks. You will NOT see any of that from me for a long time.LOL
Betty, I think palette knife painting looks a lot easier than it actually is! I have not tried it with buttercream, but many years ago, I tried it with oil paint and I was horrible. Like piping, it requires practice (a lot of it, for me)!
