What is the best and easiest way to ice a number 3 birthday cake in everyone's opinion buttercream or fondant?

My vote would be for buttercream.  Covering it in fondant is definitely 100% doable and probably not too difficult if you have worked with fondant before, but in regards to ease, buttercream wins, at least for me.

It needs to be covered with buttercream before applying the fondant anyway, so if you prefer to do buttercream only, just add a little more.
