So I just started in the cake industry a little over a year ago and its very frustrating setting the prices for the cakes. I do custom cakes and every design, detail, size, taste has different pricing. I had a customer wanting a 10 inch cake with fondant for $30 !! my concern right now is how do I tell my customers  the price i set is final and i can't go lower without sounding aggressive and still keep the customer happy and satisfied??

You don't want the customer who argues with you about price.  Read the comments in this post - the topic is very different but the comments will tell you exactly what you should do and not do :)   https://www.cakecentral.com/forum/t/847973/188-for-a-wedding-cakefeel-used

Exactly what Lynne said!  Why do you care to try and retain a customer who wants a 10" round, fondant cake for $30.00?  It would be very easy for me to tell her that it would cost me more than $30.00 to make the cake.  She could like it or lump it, I could not care less.
