Has anyone tried those sweet potato and bean paste recipes? I need to make a cake for my mother in law for Mother's day, and my father in law is diabetic, so I tried the bean paste and sweet potato recipes with Natvia icing sweetener (my father in law is diabetic), they wouldn't mind the taste (they are chinese and love red bean and sweet potato desserts). I decided against conventional buttercream recipe with Natvia since Natvia is sweeter than sugar and I already find buttercream too sweet and having with Natvia at correct consistency would be inedible.
I tried both recipes, white bean paste is more workable, it turns out to be quite stiff in both cases, so end of the petals are breaking. Also, it is not at all sticky, I had to use jam to stick my paper to the icing nail. Any ideas how to fix the consistency? Mix in some cream? Or prepare a batch of pure butter based buttercream and mix the two?
