I am making a 2 tier beach scene cake and they want the graham crumb on the top and top side of the round layer. Anybody have a suggestion for keeping the graham cracker crumbs only on the top part of the sides as I apply them?

Put a smear of buttercream then press the crumbs on.

You could use piping gel too.
