So my friend asked me to make a Little Mermaid cake for his twin girls, and they want "fresh fruit as the colors" because they are crazy about fruit. I have no idea what I should do for this. Maybe cut fruit into the shape of fish and stars, etc.? I don't know, I've never used fresh fruit on a cake before as a decoration. Any ideas are very much appreciated! Thank you so much! :)

Or you could make the scales on her mermaid tail out of kiwi or strawberries? But you wouldn't want to do it far in advance. Maybe do the imprint of the scales  ahead of time and cut and place the cut fruit just before the event. I would think you would need a glaze for the fruit, like you would for a fruit flan.

Fresh fruit has a *ton* of water in it. Be very careful.

Yes, pastrypet is right.  The liquid is a problem as is "browning" of some fruits which will need to be dipped in lemon juice or such. That is why you cannot do too far ahead.

As with many things, I would do a test cake ahead of time before committing to this.

There is a fresh fruit flan recipe on allrecipes.com

That contains a glaze recipe. Otherwise you can find a packet of glaze mix or an already made glaze at most grocery/supermarket stores.

You are welcome. Please post a picture if you do make it with fruit. Good luck.
