Filling Question.

I am filling my cakes with mousse. I'm thinking they need to be refrigerated but covered in fondant won't they sweat? what do you do about that.

What are the ingredients of the mousse?
Even if fondant sweats, all you need do is let it sit at room temp until it evaporatesicon_smile.gif DO NOT! touch it.
To help prevent sweating, box the cake, then put the box into a plastic bag. When you take it out, leave it on the counter several hours until it comes to room temp before unwrapping it. You should not have any sweating.

thank you . my mousse has cream in it. Do you have a better choc filling that does not have to be refrig? Have you ever made orange mousse using orange curd.
