I have had just the same such issue with tastings and overcame it by freezing the extra batter and then making sure to use it within the next month in some of my other orders. This is working fine for me. I also do cupcake size and put the filling in the cupcake and the frosting on top. I also include some fondant for sampling with the cakes.

I too make up batches of cake mix and freeze it raw. I defrost in the fridge overnight and then bake as normal. It means I can offer 3/4 different flavours of cake that are freshly baked.
