
Hi all, what is the best way to attach isomalt gems to fondant so they stay put? Piping gel or royal icing?? Also, can you put isomalt in the fridge overnight? I have a BIG cake coming up and would like to decorate as much as I can prior to delivery...the cake will have to sit out on display for several hours so I need it to be cold before delivering...wondering if i can stick the isomalt on it beforehand.

I think you can use royal icing or melted chocolate. Melted chocolate sets up much faster than royal and then you don't have to make a batch of royal icing. You can put it in the fridge without a problem unless it's really hot and humid when you take it out of the fridge. Then your fondant will get goopy.



You do not want to put your isomalt in the fridge. it will cloud up and look bad. you should think about adding them last so that you don't have to do that.

Hello - You can prepare isomalt decorations up to a few months early, but store them in an air-tight container with a packet of food-safe desiccant. Don't refrigerate them, because the refrigerator is a humid environment and your gems might lose their shape and get sticky.
The best way to attach isomalt gems to fondant is with clear, melted isomalt. The other mediums can cause your gems to melt the gem in time. Hope that helps!
