After freezing a cake, and leveling, and thawing, at what point do you frost it, and place fondant on it?

I let my cakes defrost in the frig overnight. Then it is ready for any work to be done on it. The longer you let it sit around the less time the client has to eat left-overs so work on it as soon as it is thawed.
