I have a 4 tier Wedding Italian Creme Cake with Creme cheese icing due this weekend. How early is too early to torte (4 layers) fill, and ice/crumb coat this cake. I do have refrigeration available

For my larger cakes due on Sat's, I always bake on Wed, just keep it wrapped really well and in the frig.
