THIS WILL BE MY FIRST TIME MAKING A CROSS CAKE. I'M GOING TO CUT OUT OF A 1/4 CAKE. MY QUESTION IS DO I STACK, FILL, AND FREEZE MY CAKE BEFORE I CUT OUT MY CROSS? OR CUT MY PIECE BEFORE I FILL MY CAKE???? HELP PLEASE!!!

When I did the cross cake in my gallery, i used a 13x9 pan. I torted and filled the cakestand cut it in half (to get two 13x4.5 pieces). I then cut one piece in half and used that to make the short pieces of the cross. I also trimmed those down so that they were proportionate. Once everything was in place, I then crumb coated the whole thing and covered in Fondant. If you are just going to use butter cream, I would suggest "glueing" all pieces together with butter team before giving it a final coat. HTH!

I did something similar but cut the one half into thirds and placed them as the crosspiece and added at the top.
You can see it in my photos.
