What is the best way to fill cupcakes? How much filling goes into a cupcake?

I don't know if there's a single best way as opposed to what works best for each person. Some people love the bismarc tip. Others use an apple corer to pull out the center and spoon in filling.
Personally, I'm a big fan of a paring knife. I take the knife and cut out a wedge from the center of the cupcake, kind of in the shape of an ice cream cone, and then I spoon in about 1 tsp. of the filling before putting the cap back on top. Sometimes more filling and sometimes less, just depending on the type of cupcake and filling I'm using. If I were making hundreds of cupcakes this method wouldn't be time efficient but it's fine when I do a few dozen at a time.

It's fast and easy to use. I also get a consistent amount of filling in every cupcake I know it's another gadget but I use it so much I don't mind.
I use an icing tip and decorator bag. I poke the tip in the top of the cupcake and squeeze the bag as I am pulling the tip out. I do this in 3-4 different places. You will feel the cupcake expand slightly.
I like to use a cupcake corer to take out the center and then pipe in the filling. I used to spoon the filling in, but then I realized it was much faster for me to fill a bag and just squeeze it in.
All you need is a pastry bag and a round tip. Use at least a 11,or 12, poke a whole with the tip and fill. The cup cake will start to expand, start on the next one. Easy and fast. Make sure you twist your bag above the point where you're squeezing or the filling will come out of the top.
