So I'm doing cupcakes for a good friend of mine's baby shower this coming weekend and her theme is "You are my sunshine". She wants basic WASC cupcakes with my IMBC frosting and chopped up candied orange and or lemon pieces sprinkled on top. Simple and cute enough, right? EXCEPT; I have no freaking clue where to find candied citrus this time of year, a month ago maybe but now?? I don't have time to order anything. Would dried oranges, like from the health food store, either dipped in simple syrup and rolled in sugar cut it? or would that be just gross? GRR! Why do the simplest ones give me the most trouble!! TIA for any input/suggestions at all!!!

It's not difficult to candy fresh peel. Peel the orange or lemon, being careful not to get pith. Put in pan with water and bring to boil. Strain the peel/throw out the water. Do this two more times. Then simmer in simple syrup for a bit, drain and sprinkle with granulated or sanding sugar. Chop if desired. Whole process should take 30 minutes.
