I've made two of these so far...I stack round cakes for the neck, 6 or 8 inch depending on how big you make it. Next you will need to cut a piece of foam core, to describe it best i would say the shape of a bowling pin. The fat end going on top of the neck and then the skinny end sticking out. This will give you a platform for your head and nose. Stack cake on top of the platform and then carve to shape head. For the horns i made a skeleton out of wire and then covered with modeling chocolate. u could use fondant if you wanted. I will upload a pic of the most recent one i've done. Maybe you could do something like this & the antlers are rice krispie treats. turned out really good!
