If anybody can help me please. I am making 2 10" round cakes friday. it's going to have bc frosting with fondant decorations. The party is on Sunday but I'm leaving out of town Friday, and my friend really wants me to make tha cakes. I told her she can put them in the fridge but now I am affraid the fondant decoration will fall off the cake buy Sunday.
What do you recomend? and if I put them in the fridge, should I cover them?

Thanks,

Veronica

You mean it can be out for 2 days and nothing is going to happen. I will put banana filling in one cake and strawberry in the other one.

Since you're using perishable fillings I would refrigerate. I don't use perishable fillings because I don't refrigerate my cakes. thumbs_up.gif

I don't know if you'll have any trouble or not with your fondant decorations bleeding on the bc from condensation when you take it out of the fridge. I have had issues with condensation and humidity but maybe you won't.

Without perishable fillings your cake would be fine "out of the fridge" for several days. thumbs_up.gif

Do you do cream cheese frosting cakes? I thought they needed refrigeration.

Thanks!

i don't refrigerate cakes, but you can refrigerate it with fondant decorations. The only thing, if the decorations "sweat" after coming out the fridge, the colors could run. I'd leave it out if none of the fillings or frosting is perisheable.

I refrigerate all my cakes and never had any problems.
