Hi all - I have a 30th Birthday order for this Sat for Caramel Mud Cake. Not really sure what filling to use, I usually go with ganache for white or dark mud cake.
Does anyone have any recipes for fillings that sing with caramel mud!
TIA!
Lauren

How about an espresso buttercream?
thats easy....white choc buttercream, its one of my most popular flavours . . .gorgeous combo
I have never made a mud cake but have always wanted to. I just don't know if I can get my conversions right from Aussie to American.... all the recipes I have found on this site.. have to be converted... darn it.
I think the espresso buttercream is a great idea... sounds so yummy! Would you please share your recipe for the caramel mud cake?

I couldn't find a recipe for this today whilst they were updating the site, so i improvised. I had some Buttercream Dream in the fridge, melted some white choc and mixed it thru. It ended up with some small lumps of choc in it, but I covered with fondant so no matter! Yummy.
The final result was white choc ganache filling, white choc buttercream and then fondant. I just wish I was going to get to eat a piece!
This is the Caramel Mud Recipe I used - it's from a Woman's Weekly Cake book. I haven't actully eaten this cake yet, but it looked and smelled fantastic!
185g butter, chopped
150g white choc
1 cup (200g) firmly packed brown sugar
1/3 cup golden syrup
1 cup milk
1 1/2 cups plain flour
1/2 cup self raising flour
2 eggs, beaten lightly
* Combine butter, chocolate, sugar, golden syrup and milk in medium saucepan, stir over low heat, without boiling, until smooth. Transfer mixture to large bowl, cool for 15 mins.
* Whisk in flours then egg, pour into prepared pan ( 8 inch, 3 inch high)
* Bake in moderately slow oven about 1 1/2 hours ( mine was in for 2 hours)
