Hi,

I am having trouble getting my cakes to be level after I put filling in them. The come out flat, and I use the wilton leveler to cut them open. But as soon as I put filling in it all goes down hill. I try to eyeball it to make them level but no such luck. Any help would be appreciated.

Could you be putting in too much filling?
If you use tip 12 to make your dam, then fill just to the top of the dam (or slightly below it) you should not have problems.

Even with using the leveler, check to see if the cakes themselves are level. Sometimes you'll have a high end / low end. If you put a low end side on top of a low end side, you'll have a non-level cake.

I have that sometimes .... looking forward to when my Agbay fund is full!

I kinda mash mine together after I fill them...not enough to squash the filling out, but firmly and then I use a small level to check them. You can use a level both before and after icing. HTH
