Hello, I have a couple questions:

I am making a wedding cake for a friend and her flavor of choice is a white chocolate cake. Firstly, does anyone have any suggestions of trusted recipes for a white chocolate cake recipe?
She is wanting the cake to be covered in fondant, and I know that limits the frosting and filling of the cake as it cannot be refrigerated once the fondant is on. I was hoping to make a white chocolate cream cheese frostingâ¦is it possible to do this without refrigerating the finished cake? If no, are there any suggestions for a great frosting/filling that would compliment a white chocolate flavored cake?

Fondant can be refrigerated. The only risk is some condensation when you take it from the fridge. If the room is cool, the condensaton will be minimal.
