I just got finished with torting and filling my cakes, also put a buttercream coat on them. Placed the cakes in the fridge. My ? is if I cover them in fondant right now let them sit overnight on the counter and then decorate Friday will they be OK for Sat. when they are due? Or should I just leave them in the fridge and cover them in fondant and decorate all on Friday. Thanks, Connie

Yes, you can finish them now if you'd like.
The fondant could become a bit hard, but still edible. If you have time to do the covering & decorating on Fri I think that would be best.

i normally cover the cakes in fondant and leave them in the fridge over night. they do get hard but i think it makes them easier to handle while decorating. dont put the tiers back in the fridge an hour or so before you deliver them and the fondant should be soft again.
