So I rarely get real excited about wedding cakes! I am a special occasion kinda a gal! I did this cake with the technique that I have seen Norman Davis use. It is all buttercream piped with a #3 tip. My hand was so cramped after this cake! I really love it and the client gave me freedom to roam on this one!
The technique is just pipng in circles while turning the table. You just overlap on the next row and so on!
The lighting was so bad......I had to pick the best and these were them!
They celebrated there 50th or was it 40th anniversary (so tired!) Anyway they never had a wedding cake and I wanted it to be special!

Oh my! This cake is beautiful! I am not sure I could do a whole cake in that technique but anything that keeps me from trying to get icing smooth is worth a try.

Moy, how did you get your smbc so white?? mine is always off white and when I use the French..it's even more yellow since it's all egg yolks!

By the way, the cake is drop dead stunning!

How did you get such sharp edges? This technique is beautiful, but your cake with the smooth-as-glass icing is STUNNING!

Wow I go to sleep and so many people replied! Thanks so much!

Zmama
The icing gets hard like butter when chilled. I literally scrape the sides with a bench knife or triangle. I apply very thick coats and chill the cake. I then take the flat egde and remove the excess icing off. It is so hard to explain but very literal!

RisqueBusiness
I whip for ever! Maybe my cows are eating something different too! It is actually a bit more off white!

A cramp is an understatement!!! Is it just tiny loops of icing done in layers all around the cake? I definately would not have that kind of patience for that kind of stringwork!

Excellent job!
