But I was wondering, what do you think the tops of those are made of. Some of them look like very thick round slabs of frostings with flat tops. Curiousity is killing me!

Your link just goes to a list of websites, so I don't know whch cupcakes you are looking at.

there are some I have seen that have a lot of icing, flat on the top and the scraped smooth on the sides.

I think that the icing is just smoothed with a spatula on top and the sides.
