We will be travelling about 3.5 hours this year, so I'm only making a snickerdoodle cake decorated like a pumpkin pie and 2 coconut cream pies.
What's a snickerdoodle cake? Never heard of it, but, I LOVE snickerdoodle cookies. They make one's house smell like "home"!

I think of Friends everytime I cook a turkey. For the past eleven years I have to do a "turkey dance" before I wash & prep the turkey for baking. All 3 of my girls love it. My youngest keeps asking me to stick it on my head & scare daddy. I reply that Mommy's head is too big & would get stuck.

Oh, I miss Friends ![]()
So I´m going to a friend´s house on Thursday and I´m bringing green beans, camembert mashed potatoes and key lime pie (first time making it so I hope it comes out OK). Then, because I like to have left overs, I´m making my own turkey on Thursday (I love the smell in the kitchen on Thanksgiving day), stuffing, streussel sweet potato casserole, Turkey stock (I´m making tamales the following week for my birthday), more green beans, cranberry sauce and maybe another pie (possibly pecan). I watched Alton Brown´s episode on the best pie crust and I want to give it a try. Then on the weekend I´m making the cakes for my birthday (I know, I couldn´t resist... there is something I want to try to make) so I´m keeping myself busy busy busy.... and loving it. ![]()

Ps: By the way, I´m not American, I´m from Spain so this is a pretty foreign tradition to me but I love it! I love the spirit of eating together for longer than half an hour and talking about stuff and being happy with friends and family. It reminds me of home. My friends do laugh at me sometimes, they say that it seems I grew up doing Thanksgiving with Martha Stewart. (sp?)

It's somewhat of a spice cake with a yummy frosting to match!! It is sooooo good! But with all the cakes you're doing lately, forget about the snickerdoodle one for now and get some rest!!

Someone here posted the recipe a while back and it is the best! I can't find the cinnamon chips used in it here most of the year, so I make several of them when I can find them, and I'm stocking up on them this year. It's really the only kind of cake that I like anymore. I've never used the glaze on it that is in the recipe, I usually use cinnamon buttercream.
1 package Cinnamon Swirl Cake Mix (Betty Crocker makes one)
small package of French Vanilla Instant Pudding Mix
1 cup of whole milk or evaporated milk
1 stick of butter, melted
3 large eggs (for a bundt add 4 eggs, but not for the other size pans)
1 tsp pure vanilla extract
3 tsp cinnamon
1 tsp butter extract
3/4 - 1 bag cinnamon baking chips (Hershey makes them, but they might be seasonal. King Arthur Flour sells them too).
Place rack in center of the oven and preheat to 325.
Grease and flour a bundt pan, 13x9x2 or two 9 inch round cake pans.
Place the cake mix, pudding mix, milk, melted butter, eggs, vanilla, butter extract and cinnamon in a large mixing bowl. Blend with a mixer on low for 1 minute. Scrap down the sides and beat at medium speed just until combined. Do not overbeat. Stir in the cinnamon baking chips. Then sprinkle the cinnamon mixture that came with the cake mix onto the batter, and only stir 6 times. Divide the batter into the pans.
Bake the cakes until they are golden brown and spring back. A bundt will take 55-60 minutes, layers approximately 27-29 minutes. Test it before removing - I have undercooked the bundt twice, but it was still delicious!!!
Cool on wire rack for 10 minutes and then remove from pan.
(You might not want to add the whole bag of chips, but I prefer to).
If you make this as a bundt or even a 13x9x2, I prefer the Brown Sugar Glaze for it. Its a little sweet, but just drizzle it sparingly and it is delicious! Here is the recipe:
3 Tbl butter or margarine
3 Tbl packed light brown sugar
3 Tbl heavy (whipping) cream
½ tsp pure vanilla extract
Place all ingredients in a medium size pan over medium heat. Bring mixture to a boil, stirring. Let boil 1 minute, stirring often.
Remove the pan from the heat and spoon or spread the warm glaze over the cake.

I'm headed to Walmart so will look for the cinnamon chips. Can always throw a few bags in the freezer for using later on.

We have to go to mulitple houses for thanksgiving, so I am making 3 different desserts. I will be making a triple chocolate cream pie (easiest thing ever but, DH loves it!!), a yellow cake with pumpkin spice coffee creamer added to the cake and the icing (my dad LOVES pumpkin anything), and then either a triple chocolate fudge cake or a coconut cake for my mom's house (not sure which one she want's still need to ask her!). I think I need to start baking the cakes tonight.....so that I can be sure to get everything done!!
Here's my recipe for Snickerdoodle Cake:
Snickerdoodle Cake
1 (18.25 oz) box plain white cake mix
1 cup whole milk (I use whatever I have...2%)
1/2 cup (1 stick) butter (margarine), melted
3 large eggs
1 tsp. vanilla exteract
2 tsps. ground cinnamon
Adjust the oven rack to the middle position and preheat the oven to 350 degrees. Grease & flour two 9 inch round cake pans.
In a large bowl with an electric mixer on low speed, combine the cake mix, milk, melted butter, eggs, vanilla extract and cinnamon and mix for 1 minute. Increase speed to medium and beat until well combined. Divide batter evenly between pans.
Bake cakes until they are golden brown and spring back when pressed lightly, 27 minutes.
Transfer pans to wire rack to cool. Invert cakes onto rack. Cool for 30 minutes.
Frosting: middle, top and sides. Place cake in frigerator until frosting is set, about 20 minutes.
Cinnamon Buttercream Frosting:
8 Tbls. (1 stick) butter, room temp.
3-3/4 cups confection. sugar
3-4 Tbls. milk
1 tsp. vanilla extract
1 tsp. ground cinnamon
In a large bowl, beat butter until fluffy. Add the confec. sugar, 3 Tbls.
milk, vanilla & cinnamon. Blend on low until the sugar is incorporated. Increase speed to medium and beat until fluffy. If frosting too stiff, add a little more milk.
Enjoy!
I've been visiting other threads this morning and now I'm wondering.....what about using Cinnamon flavored coffee creamer in the icing and/or cake? I think I'm going to try it!
My son is our Asso. Pastor and frequently uses his "mom" as an example. A little while back he "got on me" about my cakes. He told the entire congregation that I'm all about experiments and that when he was living at home and I was in cake classes that he had to taste EVERY experiment...."Some I liked and some.....well, I didn't like ALL her experiments!"
Hey! That's why they are called experiments! Anyone remember Ben Franklin? I think it would be pretty hard to bake a 4 tiered wedding cake in a fireplace oven! LOL OOOOOO! That would be COOL though, if we could do it! Anyone ever tried?

hey cheer up...boston market has a fine spread...or you can even order a whole thanksgiving dinner from Stop and Shop. If there is one around you. I saw the commercial yesterday. Happy turkey day.
Everything sounds sooo good. Man, am I jealous of you all. We're moving next week, so I'm in the middle of packing, so this year looks to be a Boston Market year.

Sounds like a never ending list. But my mother has recently been diagnosed with Alzheimers, and has been steadly getting worse, so this is a labor of love for her. She always did it all, so now I'll do it all for her.
Never take your mothers or anyone for granted, it is a very sad feeling when your mother tends to forget who you are.

Funny story though......the first time I ever went to meet my hubby's (then BF) family was for Thanksgiving. And it was the WHOLE FAM DAMILY! Mom, Dad, Sisters, Grandma, Aunts, Uncles, Cousins, etc, etc! I walked into the house and they had and entire table set up with just booze! I was floored! My family has never had "adult beverages" at Thanksgiving and only a little wine on Christmas Eve. Guess they corrupted me! LOL
And, yes, Beer Butt Chicken is the same as Drunken Chicken. My recipe calls for only half the can of beer (hubby gets to drink the other half..LOL), then add melted butter, garlic powder, paprika and a couple other things to the can and place the chicken over it. Pop a potatoe in the neck hole to keep the steam in and you'll have a succulent bird!
Heres it the recipe for the Chocolate Cherry Balls:
Chocolate Cherry Balls
2 Boxes Powered sugar
1 Jar Cherries, drained & chopped (save 1 teaspoon of the juice)
1 stick butter, softened
2 cups chopped pecans
1 can (small) sweetend condensed milk
1 bag chocolate melting candy
Mix the first 5 ingredents, cover & put n the freezer overnight. Next day roll the mixture into balls (this step was very hard for me.). Chill again (I would freeze them) Dip each ball in melted chocolate (I would only keep out about 10 balls because the heat will melt them VERY fast!!Into a goopy mess
) Chill again. Keep refrigerated.

They are difficult to roll into balls. I use a small ice cream scoop.
When you did them into the melted chocolate you need to make sure that they are GOOD & frozen cause the balls will change consistancy very fast. So just keep out 5-10 balls while dipping them.

Before Thanksgiving, I (stupidly) arranged for the 4th year in a row a turkey day on Wednesday day and night at work for those that won't be spending turkey day with families or whatever. So I have to make stuff for that but we all bring in stuff.
For my family:
turkey, gravy, mashed potatoes, stuffing, broccoli/cheese, sw.potato casserole, corn, cranberry relish, rolls, pumpkin pie, choc. mud pie, cheesecake, and pecan tartlets.
Turkey day is my favorite day to cook. I'm sure I left off something since I didn't add the appetizers. But with 7 kids and hubby, they each have their favorites!

Might have known. Went to Walmart and no cinnamon chips. Also looking for raspberry swirl and mint swirl chips. Will try Springfield as it is the nearest big town but it will be a while before I go. Nestles had some good recipes for the raspberry and mint swirl chips. Any hints as to where I can find the chips here in Missouri?
