I bake two layers and then torte to four. The slice of cake looks lovely on teh plate with the four payers of cake and three layers of filling.
Most caterers everywhere serve the wedding cake on a 5"/6" bread and butter plate, so a four inch tall slice, lying on it's side fills the plate nicely.
If your bride requests a 6" tall tier, then she also needs to inform her caterer to bring different dessert plates.
