The sugar in a cake batter will normally melt, superfine will melt faster.
The grainy texture is probably not from the sugar. (And sometimes, DH is not always the best judge.)
you can blend regular sugar in a food processor to make it superfine (saves a lot of money). But you might want to try a taste test using your favorite recipe vs a similar recipe or even a mix. And get another judge besides DH.
You may find that your recipe is better than you think.

that food processor trick is good. i have also read that you can add 2 tablespoons of hot water to the butter and sugar while creaming it and you will get a better texture....
i also dont think you are creaming it for long enough...try creaming it longer.
