When I had my home inspection by the department of agriculture, he said be careful using cream cheese icing because it can go bad easily. I see people make cakes with fondant, and use the cream cheese filling. Do you guys refrigerate these cakes? I didn't think you were supposed to refrigerate fondant? If anyone wouldn't mind clearing this up for me, I would appreciate it. Thanks icon_biggrin.gif

Fondant can be refrigerated. You just need to be prepared or guard against condensation.

If the room is warm, there is a higher risk for condensation. If you don't have bright colors, it will evaporate quickly (you can turn a small fan on the cake, too)

If you remove the cake from the fridge, into a nice cool room, the condensation should be very light.
