Ok let me make this quick. I am going to a party today and had the crazy idea to make a cake topped with chocolate ganche. What should I ice the cake with. I wanted to achieve the look that the ganche doesn't cover the whole cake and drips down the side, but I don't know what to ice the cake with. I was afraid the ganche would melt buttercream.

Thanks

If you refrigerate the cake well (or freeze it), you can use buttercream under the ganache.
What time is the party?

Iuse the hersey's chco icing recipe and then pour the ganache...
You need to let the ganache cool completely or it will be to runny...if you need to speed up th cooling process, stick it in the freezer..

you can view my photos, there are a couple on there with the icing/ganche combo...it is very good...

good luck thumbs_up.gif

nmrunyon,

check out this picture:

I torted a chocolate cake with an orange grand-marnier mousse. I covered the cake with a whipped up milk chocolate ganache and then poured a dark chocolate ganache on top. IT worked out great.

The only thing I would do to make it more stable now that I know better is to add a mortar dam.

here is a link to a few ganache recipes with instructions:

Let me know if this helps.

Good Luck.

Ice it with buttercream. It will be fine.

It should not be super hot when you Are ready to pour it on.

Off I go to give it a try. I did stumble upon a recipe that I haven't used in quite a while with sweetened condensed milk, pudding, chocolate, and whipping cream. If it all works out I will post the recipe. I know the recipe for the icing is wonderful but I dont' know if it will hold up to the ganache. Keep your fingers crossed!!!!

Thanks for the help icon_biggrin.gif
