Uses For Lemons Minus Their Zest?

I have 12 lemons, all with the zest grated off, sitting in a bowl in my kitchen.

I use them for cleaning when I have just the one or 2, or for freshening up the microwave interior, but I made 2 big cakes today and needed a lot of zest so am just wondering what the heck I use dozen of them for!

If anyone has any ideas, they would be gratefully received.

Juice them, and freeze the juice in ice cube trays. When frozen, pop them into a ziplock bag. You will always have "fresh" lemon juice for your recipes.

I like to marinade chicken with it... I also use lemon juice for salads...

I like the idea before to freeze the juice in ice cube trays thumbs_up.gif

I love the idea of freezing the juice for fresh lemon juice in a recipe.

I'm going to do that the next time lemons are on sale just to keep around!

Mojitos anyone??

Here is my recipe:
2 tender sprigs of fresh mint
1 ounce simple syrup
1 ounce fresh lime or lemon juice
1 and a half ounces Bacardi silver
soda water.

Muddle mint leaves with the lime or lemon juice and the simple syrup on the bottom of a glass, add ice, add the rest of the ingredients and enjoy a super refreshing drink in this hot weather!

Just as Hemingway liked them!! icon_lol.gif

Great ideas here! You can also make lemon granita. Recipe calls for zest, but if your lemons are really flavorful, I think it'll come out very nice. (Note the ingredient amounts depend on how much lemon juice you have.)

Ingredients:
x cups fresh squeezed lemon juice
x cups granulated sugar
x TBS grated lemon peel (if you had it)
(2 times x) cups water

Combine granulated sugar and water in saucepan. Bring to boil. Simmer 5 minutes. Then remove from heat and add lemon juice. Bring to room temperature. Pour in pan (whatever size you have should work fine). Freeze 1 to 1-1/2 hours, or until center is "mushy". Stir with fork. Check and do this every 1/2 hour to an hour, until frozen, light and fluffy.

mmmmm, I love lemons. I slice them up and make lemon burritos or
dice and add to diced cucumber and tomato add a little chili powder makes a cool salad or
put a chili saladito in the middle and eat it or
make me a pitcher of margaritas or
use as a marinade or
use them with salt to clean copper pots or
stick them on my elbows to lighten or
spritz them on your hair sit in the sun and get some natural streaks or
mix the lemon with sugar and use as a mask to lighten dark spots on skin
I LOVE LEMONS

oh yeah forgot, slice and add to your water when dieting

You can also slice them really thin (I used an electric deli meat slicer - but you could probably use a mandoline), coat them with sugar and put them in a food dehycrator. They make a really pretty garnish.

thank you so much for all the ideas. regret that in the UK at the moment there's not much occasion for iced tea with the weather being so unseasonal!

Never thought about lemon curd - will make that I think
and thank you once again for all the suggestions - juicing them and freezing the juice is another possibility.
