I am doing a to-scale version of someone's house for a housewarming. The cake is going to be 16" wide and needs to be 11.5" tall.

I am doing the 16" wide by butting to 8" squares together side by side.

I am going to build up using 8" x 2" squares stacked. My thoughts are that I will do the following to get up to 12" tall....

Building from the bottom up as follows:
2" layer
carmel buttercream filling
2" layer
cake board
2" layer
carmel buttercream filling
2" layer
carmel buttercream filling
2" layer
carmel buttercream filling
2" layer

Do you think the top 8" without a cake board anywhere in there is going to be stable or collapse? I am using good dense recipes that I know stack well - but that also means they have some weight to them. I need to not have a cake board in there anywhere because I am having to do a lot of carving on the top of the cake and I will keep hitting cake board.

Anyone?

as long as there are plenty of dowels, it should be ok. just don't over fill the layers, it might make them slide.

I would put another cake board between your next 2 layers, in other words for every cake filling cake board, cake filling cake board, etc.....then I would dowel. Good Luck.

Being that tall, I would also put at least 1, probably 2 dowels through the entire cake and into a hole in the cake board. That would prevent it tipping over.
