I can't BELIEVE it ! I'm SOOOO excited ! My black forest cheese cake just took first place, and best in class at the Country Fair!!! I didn't even get a picture of it !!! I'll take one even it is sliced ! LOL! I don't know what happened with the carousel cake yet..... Hubby was pretty well beat, and they had a Gazillion cakes yet to judge, so I'll go back tomorrow ( alone ),and see how it did.. I'm sorry... I'm babbling and I can't shut up.... icon_lol.gif

You guys are just SUPER !! Thank you so much for all the good wishes and support through all this.... I've never entered any kind of competition, and I was scared to death .... But there you all were just cheering me on..... THANK YOU !! Here is the recipe, and I just posted the pictures ( messy left overs now ) in my photos.....

Black Forest Cheese CakeINGREDIENTS:

2 (11 ounce) pkg. No bake cheesecake mixes
2/3 cup butter or margarine , melted
¼ cup white sugar
1 (3 ounce) pkg. Ladyfingers
1 (8 ounce) pkg. cream cheese, softened
3 cups cold milk, divided
1 (12 ounce) container whipped topping, thawed
1 (21 ounce) cherry pie filling, or flavor of your choice
1 (12 ounce) pkg. Semisweet chocolate chips
1 cup heavy whipping cream
1 tablespoon unsalted butter

DIRECTIONS:

1. In a bowl, combine contents of crust mix packages, melted butter, and sugar.
Press mixture on to the bottom of an ungreased 10 spring form pan. Arrange
Ladyfingers around edge of pan.

2. In a mixing bowl, beat softened cream cheese and ½ cup cold milk until smooth. Gradually beat in remaining milk. Add contents of filling mix packages; beat until smooth. About 3 minutes. Fold in whipped topping. Pour over crust. Allow to cool and set up in refrigerator while preparing ganache layer.

3. Heat cream over medium low heat until it just barley comes to a boil. Remove from heat immediately. Do not over- heat !
Pour hot cream over chocolate chips and let sit for one minute. Gently stir mixture until chocolate is melted and blended with cream. Add butter and combine. Do not beat mixture! Press a piece of plastic wrap against the surface and let cool slightly.. It must be pourable, but not hot.

Pour chocolate ganache mixture over set up cheesecake, and return to refrigerator until set about an hour. Pour cherry pie filling over ganache layer and return to refrigerator until ready to serve.

majormichel..... If he likes cheese cake, he wil LOVE this one, and it isn't hard to make.... just make sure you whip the cream cheese really well, and add the milk slowly, or it will lump up on you.....
