i made a batch of sugar cookies on friday and have let them sit in a cold oven to dry. its been 3 days and today i tasted them and they have lost their cruchiness and have become soft. i was told they can stay fiem for upto a week so what happened?

The cookie will draw moisture from the icing. they will still be good, but they won't be as crunchy.

What type of icing did you use?

i used royal icing. but i live in the UK and things always go soft over here if left uncoverd such as cookies or crisps so could that have an affect? do cookies go soft in the US after minutes left without being stored or covered?

In some places in the US, where humidity is high, yes. Where I live (nearly desert climate), things tend to do the opposite: they dry out quickly. Many cookies are "hydrophilic", which means that they take on moisture.

You might want to try leaving the cookies in the oven with just the light (no heat) on for a day or so, and then package them airtight, to prevent humidity effects.

My cookies get soft and break when it's humid. I'm in Massachusetts...last week my cookies were crunchy and yummy even after a week on the rack, this week they are horrible and won't hold the icing no matter how long I leave them out to dry. I might just buy a dehumidifier and end all this agony!!
