Well, it took me a few days to figure out if I can do this, and it's a huge task, but we're going to do it!

It's a "kinda" donation, in that they're paying us at cost ( $1 per cupcake) but we get loads of free advertising in various university publications.

The big issue is the 500ish little fondant Ramses I'm going to have to make, and my Carolina blue cupcake papers won't be here unti lWednesday...now who wanted to make cupcakes ?

If you can, be sure to send us "in progress" pictures so we can see how someone bakes that many cupcakes.

WOW 3000 cupcakes. I just did 100 for my hubby last night bake and dacorated lastnight after I got off work at my job for him to take to work today and I thought that was a lot...lol. And I'm not getting paid half as good as what you are!!!!! I asked for a $1 per cupcake, but I'm only getting paid $40. Oh well hubby works hard and asked me to do it....wish he would have asked me sooner so I would have had more time!!!

Congrats on the free ads that you will get. That will be a big boost!!!

I'm still up for helping. And my oven is working again!! Just a thought, if you want me to help and I make them here, they can have some that are kosher. I know the Hillel group on campus would probably like to know that for any incoming kosher freshmen. But either way, I'm available, so pm me if you want me to help.

Wow, what a project you have coming. I have a wedding next May and it will bea bout 400 cupcakes. Are you going to freeze them?? I am curious as to how you go about it.

Thanks littlecake!!

It took me about 32 oven cycles baking 4 dozen at a time. Roughly 11 hours baking time. I had 4 cupcake pans (12 cupcakes each) and so I bought 8 more. I did like an assembly line....fill the first four and put in the oven and while those were baking I would fill the other 2 sets (1 batch was one oven cycle in my mind) and put on the rack until it was time to put them in. While the second batch was cooking I would make more batter. By the time I got to the third batch the first batch was cool enough to drop into the cupcake boxes, swirl the icing on, put the fondant polka dot (I made those several days before) and close the lid. Just keep with the rotation and break it up into cycles or dozens and it will seem to go quicker. I did this for about 12 hours...it sucked...but the $2200 paycheck was quite nice and worth the 3 days work. DAY ONE: make polka-dots DAY TWO: make icing DAY THREE: bake and assemble. It's amazing what you can do with a residential range and 6 qt and 5 qt KA's!!

And honestly littlecake...I'd do it again....there was no icing to smooth and once I got going it really wasn't that bad! icon_wink.gif

edited to add: I would not try to freeze that many cupcakes. It kinda doubles your work because you are taking them from the pan to the freezer bag to the box...I prefer to handle them as LEAST as possible but that's just me.

Here's how it has gone thus far...Sunday night, order 3500 carolina blue cupcake cups ( I had called Thursday to make sure they had enough) ~begin construction of fondant covered chocolate kisses into little ramses ~ Monday, full days work ( party of 50 at the restaurant), assemble group of neighbor teens to make Ramses, get phone call saying I can only get 1100 cupcake papers icon_confused.gif ~Drink Margarita~Order 40 lb of carolina blue and white M&M's ~arrange to use restaurant oven ( YEA!!!) ~ sleep.

Hmmmmmm. I swear I posted the post-mortem when we got back from the cupcake-a thon, but it appears to have evaporated into internet oblivion.

My first piece of advice is not to endeavor to do a project of this size while married. The stress levels were epic. At one point, I literally bounced a frosted cupcake off my husbands head.I hired neighbor kids to sit and craft little UNC mascots out of fondant and chocolate kisses, and for the most part, they turned out great.

Icing 1m swirls on that many cupcakes is best described by expletives not suited for posting here. I tried to bake everything as fresh as possible, so I ended up working 42 of the 48 hours previous to the event. Color me cranky!!

But the good news is that the phone has been ringing off the hook all week, and we have generated over $1000 in catering orders this week from the event.

I want to especially thank everyone in NC who offered to help. I would have taken you all up on your offers, but I couldn't quite figure out how to arrange all the transport, as it was two of my neighbors volunteered their mini-vans, and we took a three vehicle caravan to the site. I'll post pics later when I am at my desktop. I don't have the pics stored on this computer.

I laughed so hard when I saw the part about the cupcake bouncing off his head!! Been there, done it with different foodstuffs!!

I KNEW you could do it! Girl you rock!! The time and effort you put into that will pay back over and over AND OVER in the future. You put yourself on the map with a single (well 3000) swoop!

Those darn things nearly killed me and we jsu tkeep getting orders for them...albeit at a much more reasonable $3.75 a cupcake.
