I can get pretty wound up when I have a large order, myself, so I can totally relate! I've found that a handful of powdered sugar is very effective!
What an awesome job! You are to be commended and I understand what you meant about coordinating all the area locals to help you out --- hard to do. What a good feeling to have the support of the fellow CCers! . . . . and how many people can say they've done 3000 cupcakes as a single job. WOW.
